German Cherry Dumplings
1. Boil a bunch of potatoes
2. Squish them through one of those gadgets with holes in it.
[A ricer -- Ken]
3. Add flour to the potatoes (add more rather than less, too much
potato and the dumplings get too heavy)
4. Add 1 or 2 eggs
5. Add some salt
6. Kneed the dough a bit and roll it into a long roll about 2 inches
thick
7. Wash some cherries
8. Cut the roll into a bunch of 1 1/2 inch to 2 inch pieces
9. Put a cherry in each piece and form into a ball
10. Put the Cherry dumplings into boiling water and wait until
they rise to the top
11. Brown some butter (1/4 - 1/2 lb ?)
12. Get some sugar
13. Put some dumplings on your plate
14. Cut them in half or quarters with a fork
15. Take the cherry pit out
16. Sprinkle some sugar on the dumplings, then pour hot browned
butter over the dumpling. The cherries should have nice red
juice coming out of them.The dough should be light and springy.
17. If you eat about 13 of these, you should feel satisfied.
18. For 4 people make 13 x 4 = 52 dumplings.
You can also use plums but I like the Cherry ones better because
they are juicier.
